Day of week is a fixed list of values that Chalk uses for day of week. The allowed values are MONDAY, TUESDAY, WEDNESDAY, THURSDAY, FRIDAY, SATURDAY, SUNDAY. A record can only ever hold one of these exact values, which keeps day of week consistent across curriculum, assessment, faculty, scheduling, accreditation, and budget records, as well as the API. When you see one of these on a record, it is one of the defined day of week states rather than free text, so reports and automations can rely on it.
