Tally classifies every animal two ways: its species and its sex class. Together these decide which sale an animal can go in, how it lots, and how it's reported.
The species are cattle, sheep, goat, hog, horse, and other.
The sex class is the more specific label, by species:
Cattle — steer, heifer, cow, bull.
Sheep — lamb, ewe, ram, wether.
Goat — kid, doe, buck, wether.
Hog — barrow, gilt, sow, boar.
Horse — gelding, mare, stallion.
Mixed — a catch-all for grouped animals that aren't a single class.
